The First Easter Ever~Illustrations by Dennis Jones

IMG_20150411_242632756I received a copy of this book from ZonderKids in exchange for my review.
The First Easter Ever is a great children’s book!  Recommended for ages 4-8, it is a great story that tells the story of the first Easter.  The story starts with the baptism of Jesus and ends with the ascension of Jesus.  I love how the story tells the reader how points out how Jesus promises to come back and that we will see him in the same way.  Such a powerful message!
I think that the pictures are amazing!  You can really see the amazement in the eyes of the men as Jesus ascends and the delight in Jesus’ face when he is baptized, for example.

GF-Lunch Wraps

Quick and Easy~Check!
Delicious~Check!
What more can you ask for when you are talking about a meal!  One thing that I have missed by going Gluten Free is flour tortilla wraps.  I found some gluten free ones at my local Meijers, I am sure that you can find them in your local super market.
Here are two simple wrap ideas that you can use with regular wraps too, if you do not have to go GF.
IMG_20150127_223424688
First, this is my new fav!  You need: Hummus, Mayo, GF wraps, cucumber slices, onion slices, broccoli sprouts, your fav cheese ( I like Munster and smoked gouda) , garlic paste and finally salt and pepper.
So take your wrap, spread a very thin layer of mayo on it followed by hummus and then garlic paste.  Layer with cucumber and onion slices and cheese.  Finally, lay your broccoli sprouts in the middle, lightly sprinkle salt and pepper and roll up!  SO Delicious!

Secondly, so simple I didn’t even snap a picture of it.  It’s a peanut butter~banana wrap.  I have been making this for my kiddos for years.  You just take a wrap, put as little or as much peanut butter as you like on it, peel a banana and lay it in the center. Roll the wrap around it and Viola you are finished, Enjoy!
You an use many different fruits and spreads for the peanut butter wrap:  strawberries and hazelnut spread, traditional peanut butter and jelly, apple and peanut butter, to name a few.  The possibilities really are endless!

Eggsellent Easter Brunch Bake

IMG_20150127_174722542[1]
Easter morning can be a little hectic around our house, to say the least.  There have been many times over the years that by the time we head out the door for Easter services the kids have only had sugar in their bellies.  Not necessarily a good thing when you are going to require them to sit for a bit!
Living on a farm with chickens we almost always have fresh eggs.  I was unprepared for supper one evening after we had been out for the day and thought I would put a spin on the boring eggs.  My family loved this creation so much! It is an easy peasy French Toast Bake.

What you need: (this made enough to fill a 9x13 baker)
Pam,  2 packs of refrigerated biscuits mix, a dozen large eggs, 3 T milk, 1/2 cup of granulated sugar, a tablespoon of cinnamon, a dinner plate and a 9x13 baker.  Optional: Maple syrup

What you need to do:
Preheat your oven to 375.  Spray your pan with Pam or other cooking spray.  Cut your biscuits      into quarters and roll into balls.  Mix cinnamon and sugar together and pour onto large plate.
Roll biscuit balls in the cinnamon sugar mixture and place in the bottom of the baker.
Scramble eggs and milk together and pour into the baker over biscuits
Bake in preheated oven until set, about 45 minutes
Serve with maple syrup if desired.
Enjoy!

{GF} Quinoa Salad

IMG_20140813_094611745

One of my favorite quinoa recipes is this salad.  It is a light dish that would be great for any get together.  It keeps for a couple of days so you can make it in advance!

What you need:

1 cup of cooked Quinoa,   2 cups of vegetable stock,

1 clove of garlic,  1 large red onion, 1 large green pepper, 1/4 cup fresh parsley, 1/4 cup fresh chives, 1/2 tsp salt, 1 tsp cumin (I also like smoked cumin)  1 can of black beans-drained, cherry or grape tomatoes chopped, 2/3 cup lemon or lime juice, 1 T balsamic vinegar, 1/4 cup olive oil

What you do:

Take the first 2 ingredients and cook in saucepan on stove.  Once stock is absorbed remove garlic clove.  Let cool.

Mix the remaining ingredients together and then toss with quinoa.

Chill for at least 2 hours and then serve.
